Ethiopian Lentil Stew with Jasmine Rice
A hearty, spiced lentil stew inspired by Ethiopian flavors, served with fluffy jasmine rice.
Instructions
- Cook jasmine rice with water and a pinch of salt; keep warm.
- Saute onion in olive oil until soft, then add garlic and ginger.
- Stir in tomato paste and berbere; cook for 1 minute.
- Add lentils and broth, bring to a simmer, and cook until thick and tender.
- Season with salt and serve the stew over jasmine rice.
