Filipino Pork BBQ Skewers

Inihaw means grilled or roasted in Tagalog and covers a family of Filipino barbecue dishes. Pork and chicken skewers are commonly sold as street food and eaten with rice or vinegar-based dips; the sweet-salty red glaze often comes from banana ketchup, soda, soy sauce, sugar, garlic, and vinegar.

Instructions

  1. 1. Mix soy sauce, soda, banana ketchup, brown sugar, vinegar, garlic, pepper, and oil.
  2. 2. Add pork and marinate at least 4 hours, preferably overnight.
  3. 3. Thread pork onto soaked skewers, leaving a little space so meat cooks evenly.
  4. 4. Grill over medium-high heat, turning and basting, until lightly charred and cooked through, about 3-4 minutes per side. Or broil on a rack, turning once.
  5. 5. Serve hot with vinegar dip or extra banana ketchup-based sauce.

  7. Marinate the day before. Grill close to serving time, or reheat covered in a 300 F oven with a little reserved sauce.
