Tender poached chicken served with fragrant rice cooked in its broth.

Instructions

  1. Poach chicken with ginger and scallions until cooked through; reserve broth.
  2. Toast rice in chicken fat, then cook with reserved broth.
  3. Slice chicken and serve over rice with cucumber.
  4. Use extra broth for a light soup on the side.
