Pork Rib Binagoongan (InstantPot)
Tender pork ribs stewed in a flavorful sauce. Perfect to eat over hot rice.
Instructions
- Rinse pork ribs and let it soak in clean water until the blood runs out.
- Blanch pork ribs in a pot of boiling water for 10 min.
- Remove ribs and rinse any scum on the surface; let it dry in a colander.
- Remove scum from the broth and reserve for later.
- In a pan, saute garlic and onion until golden and fragrant.
- Add green chilis and stir for a few minutes.
- Add tomatoes and cook until softened.
- Remove from heat and add this mixture into your InstantPot pot.
- Add the ribs.
- Stir in the Bagoong paste, vinegar, soy sauce and brown sugar.
- Add about 2 cups of pork broth.
- Make sure to mix everything together.
- Seal the lid and cook on High pressure for 30 min. Let the steam release naturally.
- Remove lid and continue cooking (either on Saute mode or directly on the stove) to reduce the liquid into a thick sauce.
