Pork Rib Binagoongan (InstantPot)

Tender pork ribs stewed in a flavorful sauce. Perfect to eat over hot rice.

Instructions

  1. Rinse pork ribs and let it soak in clean water until the blood runs out.
  2. Blanch pork ribs in a pot of boiling water for 10 min.
  3. Remove ribs and rinse any scum on the surface; let it dry in a colander.
  4. Remove scum from the broth and reserve for later.
  5. In a pan, saute garlic and onion until golden and fragrant.
  6. Add green chilis and stir for a few minutes.
  7. Add tomatoes and cook until softened.
  8. Remove from heat and add this mixture into your InstantPot pot.
  9. Add the ribs.
  10. Stir in the Bagoong paste, vinegar, soy sauce and brown sugar.
  11. Add about 2 cups of pork broth.
  12. Make sure to mix everything together.
  13. Seal the lid and cook on High pressure for 30 min. Let the steam release naturally.
  14. Remove lid and continue cooking (either on Saute mode or directly on the stove) to reduce the liquid into a thick sauce.
