Rustic spinach and bread dumplings from northern Italy.

Instructions

  1. Soak bread in milk, then squeeze out excess.
  2. Mix bread with spinach, eggs, parmesan, and nutmeg.
  3. Form small dumplings and simmer in salted water until they float.
  4. Serve with butter and parmesan.
